What is Water Canyon Winery?
Water Canyon Winery is a small family winery in Hildale, Utah, on the Arizona line about 45 miles east of St. George. Owners Shane and Kalie Tooke bought the vineyard in 2018 and opened the winery in 2021. It makes natural wine from organically or biodynamically grown grapes with native yeast and no synthetic additives, and it pours it in two tasting rooms: at the winery in Hildale and on Zion Park Boulevard in Springdale.
Hildale sits under red cliffs beside Colorado City, Arizona, on the road between Hurricane and Kanab. The winery is one of the few in Southern Utah, and because the Springdale room is a short walk from the shuttle stops near Zion's south entrance, many visitors find it at the end of a day in the park rather than on a special trip.

Go to Hildale if you want the full visit: the vineyard, a look at the production area, dinner at The Winery Cafe and the events venue. It is open only Thursday through Sunday. Go to Springdale if you are already at Zion; it is open every day from 3 p.m., which fits after a morning hike, and it sells bottles and merchandise.
How much is a wine tasting at Water Canyon Winery?
A tasting is $25 per person for a flight of four wines, 5.5 ounces in all, at either tasting room. A charcuterie board that serves up to two people is $20. Tastings are walk-in only; the winery does not take reservations for them.
The wines poured change with what is in the cellar. Varieties the winery has made include Sangiovese, Barbera, Malbec, Cabernet Franc and Cabernet Sauvignon, plus a Golden Muscat dessert wine. Local press describes the wines as "zero-zero": nothing added, including sulfites. If you are sensitive to anything in wine, ask staff about the bottle you are drinking.
What is The Winery Cafe?
The Winery Cafe is the restaurant at the Hildale winery, open Thursday through Sunday from 4 to 8 p.m. It opened in late 2024 and serves what St George News called modern rustic food, such as tenderloin with rosemary whipped potatoes and a beet salad. Reservations are recommended; call the cafe at (435) 862-1825. Wine by the glass is served with food.
Can you get married or hold an event at the winery?
